Traveling with dietary restrictions can take a little extra planning, especially when you follow a gluten-free diet. At Coconut Bay Beach Resort & Spa, you’re certainly not alone. Gluten-free dining is one of the most common dietary requests we receive, and our culinary team is accustomed to helping guests navigate their many options while still enjoying the variety and flavor that make dining part of Coconut Bay’s Premium All-Inclusive experience.
In addition to gluten-free, Coconut Bay can accommodate a range of dietary needs, including vegan, vegetarian, dairy-free and sugar-free diets, as well as shellfish and nut allergies. With nine dining venues, a range of cuisines and menus built around fresh, seasonal ingredients, there are plenty of ways to enjoy your time around the table.
Start the Conversation Before You Arrive
The easiest way to let us know about your dietary needs is through Coconut Bay’s Online Check-In Form, which includes a section for food allergies, intolerances and dietary restrictions. This also gives our team advance notice of your needs. Of course, if you choose not to do Online Check-In you can also share this information during the resort check-in process when you arrive.
You can also request to meet with a member of the culinary team to discuss your specific needs and dining options. Our chefs can recommend appropriate menu choices and discuss adaptations to existing dishes whenever possible.
Begin the Day at Coconut Walk Marketplace
Coconut Walk Marketplace is Coconut Bay’s main dining venue serving breakfast, lunch and dinner. Here, you can start your day with a spread that includes made-to-order eggs and omelets, yogurt, fresh fruit, smoothies and plenty more. For guests looking for gluten-free choices, items are clearly labeled throughout the buffet including pancakes, banana bread and pastries. Coconut Bay’s own bakery prepares the baked goods served at the resort’s restaurants.
Lunch and dinner bring a different experience, with cooking stations and menus that change throughout the week. Depending on the day, in addition to the main buffet, guests can choose from made-to-order wraps and paninis, a pasta station, burgers, the grilled catch of the day, salads, soups and a variety of entrées and desserts.
Newly introduced dinner themes add even more variety throughout the week, from Mexican Night and Country & Western Night to Asian, Italian and Indian nights, followed by Carnival Night and Sunday Roast Beef Night.
Guests can also enjoy gluten-free pasta and cheesecake, while gluten-free hand-tossed pizza is based on availability.
More Ways to Explore the Menu
Coconut Walk is just one part of Coconut Bay’s dining lineup. Across nine restaurants, menus feature a wide range of cuisines and are thoughtfully crafted using the freshest local seasonal ingredients available, complemented by produce grown in the resort’s two on-site greenhouses. Our farm-to-table and ocean-to-table philosophy brings the best of Saint Lucia’s land and sea to the table. For instance, at Seasons Veggie Bistro, dinner features a plant-based menu of vegan and vegetarian dishes for dedicated vegans, flexitarians or anyone craving something fresh and flavorful.
Don’t Just Take Our Word for It
What does dining with dietary restrictions look like once you’re here? Don’t just take our word for it. Recent guests have shared their experiences on Tripadvisor.
“We have two individuals with food allergies and the staff was very accommodating. (Gluten and dairy allergies). The menus were clearly marked and the food at the various buffets were labeled. A nice touch was gluten free bread substituted for the fresh rolls at the restaurants.”

“I have celiac, but had no issues eating whatsoever. Before each meal, the servers would ask about any allergies and they always made sure to point out what I could safely order. Chef Wendy at the breakfast buffet made me gluten free pancakes and made sure I knew what I could eat.”

For Jess C., who traveled with her husband, friends and family for their Coconut Bay wedding, the dining experience worked for a group with different dietary preferences:
“The food here was so good! Everything had a lot of flavor and there were many gluten free/vegan/vegetarian options for those who need it. Our favorite place was the buffet for breakfast, jerk treehouse for lunch, and silk for dinner. And of course late night burgers and pizza at Flip Flopz. ”
