When you book your Coconut Bay Beach Resort & Spa getaway, you don’t have to worry about what is available on our menus if you have dietary requirements and preferences. Our menus truly include something for everyone with a variety of vegetarian, vegan, gluten- sugar- and lactose-free selections. If you have a food allergy, from shellfish to nuts, those will be addressed for you as well. We’ll even begin working with you before you arrive, just let us know your dietary needs when you fill out your Online Check-In Form, after you arrive you can also meet with Chef Nivia, our food sensitivities specialist.
Executive Chef Angelo has created delicious menu items that won’t disappoint your taste buds. The new vegan cuisine at The Greathouse has set the bar very high for our other dining venues and has proved popular with everyone regardless of their preferences. For breakfast there’s a Vegan Omelet with an array of toppings, Vegan Scrambled Eggs and Sausage, and a Vegan Egg Frittata with Cheese. To kick off lunch the Falafel Sandwich is accompanied by a garlic and tahini dressed Mediterranean Salad, and Sweet Potato Fries. Pico de Gallo, fresh with a kick, tops Vegan Beef Tacos, or you can go classic with a Beyond Meat Burger and Fries. For dinner freshly baked Pita Bread is the perfect spoon for Roasted Tomato Dip, Hummus and Calamata Spread, all accompanying a Mediterranean Salad and Falafel. A vegan Beef Shepherd’s Pie has a potato top browned and bubbled with dairy free cheese while the Vegan Sausage Penne Pasta is tossed with Pomodoro Sauce, fresh mushrooms, briny capers and olives, and roasted garlic of course. We don’t want you to skimp on desert either and the gluten and dairy free Cookie Ice Cream will leave you wanting more.
We are also preparing to introduce new vegan choices at our four à la carte restaurants at Coconut Bay and remember our menus also feature a wide array of gluten free dishes from our hand tossed pizza and burger buns to cheesecake and French toast.
Fresh should also be a food group here at our resorts. Every day we harvest vegetables, herbs, melons, microgreens and more from our very own Greenhouses. The fish on your plate today was caught by a local fisherman this morning. We wouldn’t blame you if you enjoyed bounty of Saint Lucia from mangos to bananas at every opportunity – even in your glass – as well as the coconuts we harvest from the 1000 trees you see all around on our 85 acres.
