Meet Dillon at the Harmony Bar
You’ll find Dillon at our adults-only Harmony poolside bar. As well as being an all-star mixologist, Dillon is an entertainer through and through and can even get a little cheeky at times. The best evidence of that is his signature drink, “The Nipple.” This concoction is a potpourri of fruity flavors, including sour apple, peach Schnapps, rum, and pineapple juice. We dare you to try to stop at just one!
Swim Over to the Splash Bar to See Wade
The Splash bar is a blast for the whole family, featuring swim-up service for adults and kids. There, you’ll meet Wade, another superstar bartender here at Coconut Bay. Wade’s trademark drink is “The Wild Forest,” which features mango, rum, lime, amaretto, peach schnapps, and blue curacao, garnished with a pineapple, lime, and cherry. If you can’t get enough of Wade, you can also find him on some days in the lobby bar.
Meet Our Princess at the Lobby Bar
When our guests walk into the hotel, they have the pleasure of meeting Princess, one of our lobby bartenders. Nothing will kick of your Caribbean vacation better than her original “Tropical Splash.” Princess’ recipe includes light rum, mango, amaretto, dark rum, strawberry syrup, and pineapple juice. You’ll feel like royalty!
“Donna” Forget to Stop by the Peter John’s Lounge
Our Peter John’s lounge is an air-conditioned piano bar and dance club that features live entertainment and the islands best DJs. Kick the night off with some dancing juice in the form of bartender Donna D’s “Amazon Cocktail.” This jungle-inspired drink features peach schnapps, lychee liquors, lime, amaretto, blue curacao, orange juice, and pineapple juice.
