After a scheduled closure for refurbishments in September, Coconut Bay reopened in October better than ever. The slate of enhancements put the focus on improving guests’ experience from dining venues to pools.
The Cove
The resort’s expansive central dining and entertainment venue, now called The Cove, underwent a complete facelift with stylish and environmentally responsible coastal-casual décor including new flooring, furniture and booths, light fixtures and even new names. The Flip Flops Burger Bar and Pizzeria welcomes guests with a cheerful color scheme, the perfect place for a casual meal whether an early lunch or midnight snack. Guests can relax in new booths – with device charging stations, at high top tables or grab-and-go on their way to CocoLand Waterpark or the beach. Hand-tossed, personal pizzas are made-to-order in just minutes and burgers share the grill with fish tacos, the world’s best chicken sandwich and more. In the evening, sophisticated table linens and candlelit alfresco dining take center stage at the newly names Sea Side restaurant (formerly Capri..) Aptly named, the restaurant’s décor is inspired by colors of the beach and on the menu Saint Lucia meets Italy — from the Antipasto Bar to lobster ravioli.
Activity Pool
The Activity Pool, one of five pools at the resort, has been completely resurfaced inside and out. Guests taking a break from Aqua Fitness and Water Polo can relax in a new jacuzzi, grab a fresh towel at the convenient new Towel Hut and relax in a lounger on the deck of new pavers surrounding the pool. Improvements continue at the zero-entry Splash pool where a new thatch-covered lounge area offers plenty of shade, perfect for taking a break from sun-worshipping or just reading a book.
Sand Bar
Sports enthusiasts can keep up with their favorite teams at the newly christened Sand Bar or enjoy the day’s live entertainment from culinary lessons to dance lessons and live music. Formerly the Blu Bar, this gathering spot is bigger and better than ever with an extended bar, new stools, furniture and now four television screens. The Sand Bar is one of seven at Coconut Bay where there is never any charge for top-shelf liquor.
